Mesquite Pancakes with Kumquat Syrup

Mesquite Pancakes

1 2/3 cups all-purpose flour

1/3 cup mesquite flour

1 tsp. baking powder

1/3 tsp. salt

2 cups milk

2 eggs, well beaten

1/4 cup oil


Sift together dry ingredients. Mix wet ingredients. Stir dry into wet and blend well. Cook on hot griddle until light brown. Makes about 5-7 cakes. Serve with Kumquat Syrup (recipe below).


Kumquat Syrup

2 cups sugar

1 12-oz. package of kumquats

2 cups water


Cut kumquats crosswise into 1/8-inch slices. Combine with sugar and water and simmer until thick, about 30-40 minutes
